Before the sun

Our day starts at four. By the time the doors open at seven, the team has shaped around six hundred pastries and pulled forty loaves from the deck oven.

Most of our bakers came to us from other careers: a set designer, a nurse, a former line cook. What they share is patience and a slightly worrying love of early alarms.
